ASSORTMENT OF OSTRICH SPECIALS

Ostrich Meat is a red meat with the characteristics of poultry meat and low in fat.  Throughout July, Xin Cuisine Chinese Restaurant will be serving six sensational ostrich meat dishes for lunch and dinner.

Ostrich can be substituted in most other recipes that call for meat. The secret is not to over cook. Because of the lack of fat, the meat cooks quickly, shrinks very little and will dry out if over cooked.
Master Chef Foong cooks the meat for frying, or any of your favourite dishes as a substitute for beef.  His recommendations are fried ostrich meat with Mongolian sauce, wok-fried flat rice noodles with sliced ostrich meat and spring onion, simple cooking of ostrich meat with black pepper.
