Hazelnut Obsession

Hazelnuts are not only great in making pralines, chocolate truffles or as a coffee flavouring especially in the form latte but also great combination in cakes and pastries. August unveils this sinful dessert – hazelnut obsession at Melting Pot Café.

To prepare this special delight, the first step is to prepare cream brulee. Mix in fresh milk, fresh cream, chocolate powder, vanilla essence, sugar and put to boil. Meanwhile, place egg yolk in a separate bowl. Then, pour mixture into the bowl of egg yolk. Stir the egg yolk while pouring the mixture. Carefully pour in the mixture into a mould and bake for 15 to 20 minutes at 160 degree celsius. Set aside and leave it to cool. Once cream brulee is cold, place it in the freezer. Hazelnut mousse involves ingredients like hazelnut paste, gelatin, and fresh cream. Beat fresh cream, hazelnut paste and gelatin. Mix it well and set aside.

To assemble the cake, place a thin layer of biscuit crunch in the baking ring. Then, place a layer of almond sponge and spread some chocolate cream brulee. Next, pour in some hazelnut mousse. Repeat the method for another two layers with hazelnut mousse only. Carefully pour the hazelnut mousse on the last layer of the cake. Once that is done, chill the cake for an hour. As for the finishing touch, coat the cake with chocolate spray. Lastly, top it with chocolate decoration.
